The Sunshine Latte is a saffron latte you make at home. It was created by Saba Rahbar, a holistic chef and certified nutrition consultant whose practice, Del by Saba, helps women and new mothers eat well. She built the recipe for the part of the day that belongs to everyone but you.
It blends organic saffron and cardamom with coconut milk powder and coconut water powder, so all you add is warm milk or water.
Saffron has been cherished for centuries for supporting emotional well-being and vitality, and it's the heart of this cup: a warm pause that supports a healthy mood and emotional balance while you unwind. Every serving carries 130mg of organic saffron, a little more than one of our powder pods.
We made it for around four o'clock, when lunch has worn off and a third coffee looks like a good idea. Coffee gives you the jitters now and the crash later. This gives you a warm cup and a calmer pause, with no caffeine, so you can have it in the afternoon or at night and still sleep.
It tastes warm and lightly sweet from the coconut, with cardamom behind it. If you like a good cup of chai, you'll know the note.
One 196g pouch makes 14 cups. Have it hot, or dissolve it in a splash of hot water and pour it over cold milk and ice.
With no caffeine in it, the children can have a cup alongside yours. If you have any questions about saffron for your child, speak to your paediatrician first.
Not intended to diagnose, treat, cure or prevent any disease. If you are pregnant, nursing or under medical supervision, check with your healthcare professional first.

What saffron brings to your day
Saffron has been part of daily life for centuries. Here is what people have kept it for, and what research is looking at now.
A brighter mood
Saffron has been studied for its role in supporting mood. It is a big part of why people make it a daily habit.
A calmer pace
Traditionally used to support calm, which is why so many people save their cup for the slower part of the day.
Natural antioxidants
Its gold colour comes from crocin and its aroma from safranal, two antioxidant compounds found naturally in the threads.
Focus for busy days
Long used to support focus and a clear head.
A few minutes that are yours
A pod stirred into tea, a few threads in rice, a latte in the afternoon. The first thing most people notice is the ritual itself.
Based on traditional use and ongoing research. Not intended to diagnose, treat, cure or prevent any disease.
Questions people ask
Hot. Two tablespoons into about 200ml of warm milk or water. Stir, whisk or froth until smooth and golden.
Iced. Dissolve the two tablespoons in a splash of hot water, then pour over cold milk and ice.
No added sugar. There is 6.6g of naturally occurring sugar per serving, which comes from the coconut.
The pods are the daily measure, 125mg each, meant to go into whatever you are already making. The latte is the drink itself, already blended, at 130mg a serving. Same saffron.
Yes, it is food. One cup a day is how most people use it.
The pack says to consult a healthcare professional if you are pregnant, nursing or under medical supervision, and that is the right answer.
It is a food and there is nothing in it that is not in a kitchen. We do not make recommendations about children and saffron, and we would say speak to your paediatrician first.
